That means that this homemade royal icing can be sent through the mail, and it will stay fresh for a long time—up to a year. I remember the first time that I made royal icing. I made it for my oldest son’s first birthday cake. At the time, I was a pretty inexperienced baker, and I just took the recipe from a recipe book. It looked easy enough, and I wanted to use food coloring to color the cake.The cake frosting hardened like a rock. And, according to tradition in the family, a child having his first birthday, was allowed to get the first piece himself. The cake was placed in front of my son, and, he worked very hard to break through the hardened royal icing. The video showing the birthday party was hysterical! Royal icing get VERY hard, folks! I've come a long way since my first son's birthday, and one of the things that I've learned is that I don't have to do everything from scratch!
Tricks to Using Royal IcingIf you use the recipe below, you will have to work quickly, as the icing will harden quickly—whether it’s on your dog treats, or not.There are some tricks to using royal icing. When I had the dog bakery, I used royal icing on some of the cookies. And it can be tricky to get it to stick to the cookies. For example, the football dog treats that I designed for Super Bowl Sunday were cute as a button when first made. But, any little bit of handling and the "laces" (made of royal icing) started to fall off. When I just tried to put dots, lines, etc. right on the cookie, it sometimes didn’t stick very well, and the cookies certainly don’t ship very well. I now know that there are two ways to handle this problem: - Prick the surface (i.e. with a fork or other pointed object) to make little holes or pores in the dog treats before they are baked. Since royal icing (homemade from a dog treat icing recipe or made from a royal icing mix) sticks much better to a porous or textured surface, this will help it stick. You might also just use a dog treat recipe that has bran or cornmeal in it (giving it a rougher texture). If you apply royal icing to a very smooth treat, you run the risk of having it simply lift off.

. There is another trick that will make decorating easier. The royal icing from the royal icing mix is meant to flow, and you can sort of pour the icing over the cookies (or dip them). This saves a lot of time and labor. If I were just starting a dog bakery again, I’d definitely use the icing mix instead of spending all the time to make everything from scratch! And the mix is so much easier to use than my made from scratch recipe.
